How do the ancients preserve their food?

And how effective were their methods?

Dried and salted meat and cheeses could be preserved for a long time and still be edible. Fruits could be made into jams, and bread into ale. Honey was a chief sweetener and can last years. Also, bones from pigs and cows were used to flavour broths with, and could be used several times for this purpose.
