A total annexation of Ottomans was not in the plans as far as I know. But it ws tried to reduce the Ottoman Empire into a very small state with the signing of the Treaty of Sevres
Greece, Armenia, Britain and and France planned to occupy large lands. Most of the Antaolia were divided into areas of influence and only a small part of the Asia Minor was left to the Ottoman Empire. You can check the map above.
Also because the Ottoman Empire used to hold the title of Caliphate, it could be used as a puppet to influence the Muslim world. Therefore, annexing the Ottomans would not have brought the allies much advantage, in contrary to keeping them merely alive but under influence of the allies and keeping the Caliph under control.
Edit: At the end there was a revolution in the Ottoman Empire because of the signing of the Sevres. The revolutionaries fought the occupying forces and liberated the lands that is today Turkey. The royal family was exiled and the institution of Caliph was disbanded a few years later.
