Why were marshmallows popular in the cuisine of 1950s America?

by chaosakita

I heard that marshmallows were popular in postwar America similar to jello. What were they used for and why?

Marshmallows were popular in the 1950s, but Jell-o was the glue that held dinner together. The major food processors advertised their products in Women's magazines and often included ideas that would extend the use of their products in new and exciting ways. "Retro Food Fiascos: a collection of curious concoctions" by Kathy Casey takes a snarky look at the most questionable of these new ideas. However, there are five times as many recipes that use Jell-O as there are ones that use marshmallows. Jell-O was made by the nation's largest food processor, General Foods, while marshmallows were made by much smaller companies, that did not have national advertising campaigns, like General Foods.
