Strategically the reason they adopted scorched earth policy is due to the fact that Napoleon's armies relied quite heavily on foraging to supplement the food coming in the supply trains. However the further they got from France the harder it was to get food and the more foraging they needed to do.

This meant that destroying all crops and reliable food sources could effectively cripple the French army, combined with the Russian winter and it becomes something that kills armies.
