A lot of the HEMA practitioners are going around old libraries in Europe hunting down old fencing manuscripts - transcribing and translating them into plain English. Just last year a new source was discovered with some very interesting almagamations of various treatises - it was mainly a rossbuch (equestian manual) with various bits and pieces from Hutter's harnischfechten (fencing in armour) and some other wrestling plays which are still not analysed as yet.
The Wiktenauer project was set to to collate all of these open source copies with accompanying transciptions/translations.
EDIT: So, the answer would be no - things are MOSTLY catalogued but so many more that are unstudied and some have remained unread or unrecognised for years and decades and possibily centuries.
