Why was horse theft such a serious crime in the American West?

Horse was a mans main form of transportation.

Generally your food, water, weapons, survivalist gear would be packed onto your horse, have it stolen in the middle of nowhere chances are you wouldn't survive.

Horses were so important to trade, transport and survival that horse thieves in the American west were the most hated criminal, and therefore given harsh punishments.
