I really enjoyed "White, Sam. The Climate of Rebellion in the Early Modern Ottoman Empire. Studies in Environment and History. New York: Cambridge University Press, 2011." White discusses the role of the environment in the problems encountered by the empire in the 16th and 17th centuries.
