In the section discussing the earliest iterations of beer fermentation, its suggested that raising the drink as a toast is a gesture to the heavens in thanks of providing such a fantastic liquid. Beer would store much longer than water and had much less chance of containing disease. The earliest forms of beer that we know of originated in Mesopotamia and ancient Egypt.
