What exactly do we know about how people fought in the Renaissance and Early Modern era (1700-1800s)?

So, to inform you, the time period you gave is fully within the Early Modern Period, which fits perfectly into my focus of Military Theory of the age.

Overall, we basically know how war was fought during this time period. I would think that we know as much about how war was fought as we do about how the American Civil War was fought. In this time period, there was a lot of discussion on how war should be fought and what was needed for victory. You particularly see this in the writings of Marshal Saxe and Frederick the Great. If you have more questions, I'm more than willing to answer them because this was lacking in detail but is directly answering the quedtion.
