I've read about his plans for Eastern Europe, but never what he wanted to do with his occupied lands in the west.
I will preface this answer with the statement I always repeat before doing an answer on the Germany's post war plans. Every German official and their mother had a different plan for what was to be done with the land conquered by the Wehrmacht. The policy for the east was largely agreed upon (that it would be colonized and the local population killed). But in the west various ideas were bounced around and official policy was never really agreed upon.

Finally, we must be quite clear on the following point: France is and will remain the implacable enemy of Germany. It does not matter what Governments have ruled or will rule in France, whether Bourbon or Jacobin, Napoleonic or Bourgeois-Democratic, Clerical Republican or Red Bolshevik
But when he wrote this he could not imagine that he would have beaten France so thoroughly as Germany did in 1940. Germany had already set up a puppet state know as Vichy which exercised de facto control over all of France and its colonies. In practice it controlled only the "zone libre" or the free zone, the rest was occupied by Germany since it was deemed strategically important. Germany's plan for western Europe was almost to set up some sort of psuedo, Fascist European Union of sorts. He wanted to link all the countries of Western Europe to Germany economically ensuring that Germany would be able to dominate any country and effectively blockade the rest of the world. Similar to Napoleon's continental system. As Herman Goering put it:
a mutual integration and linkage of the interests of between the German economy and those of Holland, Belgium, Denmark, and Norway as well as intensified economic cooperation with France
As for territory Germany for sure planned to annex the region of Alsace-Lorraine as it was a German populated area. Anything above that is up for debate. Vichy France would have been given back most of occupied France once the threat from England had passed (they only occupied so much of France because they needed the channel ports and airbases).
I've heard reports of Himmler wanting to create an SS state in Burgundy or talks of annexing large portions of Western Europe including parts of France and leaving a rump French puppet state. But I've never looked into these claims. Its really hard to find reliable sources on that matter.
