Living in the modern world, the only depictions of Jesus I see are of some white guy or pictures explicitly meant as a reminder that he didn't actually look like that. Are there any surviving renditions from before he was white-washed?

There was a similar question recently. You're making a wrong assumption - people from the Levant really don't look like Gulf Arabs, but rather like other people around the Mediterranean. They're often more fair-skinned than north Africans or south Italians. Jesus has always been depicted like what we would today describe as "white", for example this icon (Christ Pantocrator) from the 6th century.
