I can't say I've read it but my library is one of the UK's legal deposit libraries, and they only list a single volume edition edited by William Foster and titled as "The embassy of Sir Thomas Roe to India, 1615-19 : as narrated in his journal and correspondence"
which seems to be this one here, although it's a 1990 edition so it seems to have grown a bit from the 1926 one in the Bodleian:
