Why didn't Hitler go for the oil in Norway, or look elsewhere in Europe or the Middle East? Why did he insist on getting the oil in the Caucasus which was so far away and defended by the world's largest army?

Oil was discovered in Norway in 1969. Even if they had know about it during WWII, they would not have the necessary technology to extract it, as all of it is situated under the sea bed in the North sea.

The Nazi government did look for and acquire oil from several places within Europe, most importantly the oil fields in the Southern plains of Romania. These oil fields were subject to some of the most intense and deadly Allied bombing raids. See here.
