How were non sour dough breads made before commercial yeast packets

according to wikipedia, non sour dough breads existed long before commercial yeast packets, but they are a little vague on the how they were made. almost all modern recipes call for the little yeast packets. This might be kind of an odd question, and maybe not the right subreddit so I appologize if I done goofed, I just realized I really don't know much of anything about the history one of the main staples of civilization, i.e. bread.

There are naturally occurring yeast in the air, if you leave the dough out long enough it will rise eventually (but it will take much longer, especially if it's cold), and you can save a piece of the dough for another batch.
