I've read that the Stasi's records consisted of anywhere from 20-30 billion sheets of paper. Their records on some individuals must have been incredibly detailed. Are there any examples of an extremely detailed record of someone?
Yes. I would recommend reading "The File" by Timothy Garton Ash (http://www.amazon.com/File-Personal-History-Vintage-ebook/dp/B0042JSNUO/). Garton Ash is a well respected commentator on the fall of Communism in Eastern Europe and lived in East Berlin under the DDR. After the fall of the DDR, the Stasi files were all made available to those the Stasi spied on (just about everybody). "The File" is Garton Ash's memoir of his time living in East Berlin along with excerpts of his Stasi file.
