Why are the days of the week named after Norse gods, from a culture with otherwise little influence on the English language?

That's because the Norse gods aren't strictly Norse, they are Germanic. The names of the gods were common to Germanic peoples including the Norse, the Angles and the Saxons. The days associated with the gods were also common. Old English and Old Norse are similar languages, to the extent that when Vikings invaded and settled England, they could make themselves understood. It's entirely incorrect to say that the Norse language had no further effect on the English language at this time.
