I had to read Richard Dunn's Sugar and Slaves: The Rise of the Planter Class in the English West Indies, 1624-1713 for an undergrad course, and might be the kind of thing you're looking for. I can't currently recall if it looks much outside the English West Indies, and it's mostly focused on the colonial era, so it might be a bit more specialised than you're looking for, but it could still be worth a look.
