So I know that the idea that people use to believe was flat is an annoying myth, but what did people think was there? Did they just have no clue and didn't want to risk finding out?

I'm sure people in the Western Hemisphere certainly didn't believe they were all ocean. I assume you are asking from a European perspective. Vikings had settlements in the Western Hemisphere by circa 1000. Here is a debatable map depicting North America before Columbus arrived. The authenticity of this map is questioned. Are you referring to scholars or the general public views of the Western Hemisphere?
