A traditional version, as in fairly biased? A good historian to look into is Rashid Khalidi, or maybe Nur Masalha, who talk about different portions of the conflict and are Palestinian authors.
Traditional Israeli historians...a good bet would be Efraim Karsh. However, if you want to get into the current mainstream and accepted Israeli historians, you'll want to get to someone like Benny Morris or Tom Segev. They're fairly well known, so you can look them up (maybe in google add "Israel" to it to make sure you've got the right person) and see which of their books you'd like to check out :).
