I was reading the Constitution of the CSA a bit ago, and I noticed something odd: of the signatories, there are several from every Southern state except Virginia, Tennessee, Arkansas, and North Carolina, from which there are none. Why is that? Their absence, most especially that of Virginia, seems very odd.
There were two "waves" of secession in what would become the Confederate states: South Carolina, Mississippi, Florida, Alabama, Georgia, Louisiana and Texas all seceded between Dec. 20, 1860, and around Feb. 1, 1861. (The dates are odd for Texas -- it left Feb. 1 but had a referendum Feb. 23.)
Virginia, Arkansas, Tennessee and North Carolina seceded between April 17 and May 20, 1861, after Ft. Sumter.
The Confederate constitution was adopted March 11, 1861. So at that time, the states you mention had not yet passed ordinances of secession.
