They did.
The Irish diaspora created Irish communities in Canada, the USA, Mexico, Argentina, Puerto Rico, Chile, Brazil, and probably every other country in the New World. They also went to South Africa, Australia, and New Zealand.

They did, especially to places like Chile and Argentina. One of Chile's national heroes was in fact named Bernardo O'Higgins and was of partial Irish descent.
