How long after the printing press was invented did it take for books to be seen as common commodities? Was there an increase in literacy rates correlating to the printing press's invention? What were the first and most commonly printed documents?

By "before" I assume you mean before Genesis was written, or perhaps even before the books were put together. One "book" that comes to mind is the Epic of Gilgamesh, which is from about 18th century BC.

As far as book after the Gutenberg press, but before he printed Bibles, it's likely he printed the grammar book, Ars minor (had to look up the name), before his got to Bibles.
