Hey there, I'm looking for a comprehensive book on the post-Hellenic Roman religions with a pantheon of Sol Invictus, Magna Mater, Regina Caelis, Serapis and others.

A good starting point would be Beard, North, and Price's "Religions of Rome." Volume I is a pretty general survey of Roman religion at large. The second volume is a sourcebook that will lead you to more primary sources and secondary scholarship if you find something particularly relevant to your interests.
As far as the mystery cult origins of the late antique religions, might I recommend Hugh Bowden's "Mystery Cults of the Ancient World" and Marvin Meyer's sourcebook, "The Ancient Mysteries."
There are many others, of course, but these should give you a pretty good introduction to mystery religions generally, magna mater/isis/eleusinian mysteries/dionysus/jesus movement/&c specifically, and can point you in the right direction on the rest.
