There are certainly sites you can find to help out. They've got a pretty good site running here where I've seen plenty of Canadian postings. However, you will have to be very careful about "taking your camera along." Most people I've worked with will be cool with you having pictures for personal use, but are very wary of anything else if they have yet to publish. I've had to send those awkward messages of "Your photos are cool, but please take them off Facebook so no one steals our research" to one to many? good-intentioned field school students. Academic theft doesn't end after m school, so any large recording will involove direct involvement with the project head.

Local universities. Look up the anthropology department, and see who's specialty is archaeology. Send them an email around field season (which is the summer). Advertise your free labor and passion for archaeology. I would save the film part for the second email, then mention that you would be interested in helping document the dig if they're willing.

You could probably volunteer at an excavation somewhere but this totally depends on where you are in the world.

I'd say its worth checking out your nearest university, they generally have spaces for volunteers. Of course if your got the time and the money there are field schools all over the world you can join up with, though these can quite costly

One of the digs I'm particularly fond of is the Alutiiq Museum's community archaeology program. Each summer, the museum picks one of the archaeological sites within easy drivable distance of the city of Kodiak and goes out to excavate the site. They've been doing it for several summers, and it's a particularly productive way to get the community involved and excavate a site.
