I've been playing a lot of medieval era games lately, but most of them seem to focus on the "cool" High and Late eras, and not so much on the early age. I was wondering if there were any cool aspects of Early Medieval Europe, and what are some of the key things that I should be researching/ learning about.

You need to be more specific, the early medieval period began after the Western Roman Empire fell. From there to the "high" era is something along the lines of 700-800 years. You have the Byzantines, the rise of Islam, Charlemagne, the Vikings etc. A lot of interesting events and peoples to learn/read about.
