So far as I know, almost all the famous torture devices are not only dated to after the 11th century, but are post-medieval inventions. I'm not aware of any extant torture machinery from prior to 1000 CE. Systematic torture, performed by professionals with specialized tools, is something that many people assume to have existed within the period, but was probably done on a more ad-hoc basis. Castration, blinding, flaying, and the like are much better attested to.
