Considering the Crusades were fought in many places including Syria, Palestine, and Egypt is there any evidence that some European men keeped any of these women as wives? What were the main challenges in doing this? Was there too many issues? I'm very curious.

Yup. I did a module on the Crusades last year. Some of them stayed on and ruled the Crusader states after they took Jerusalem in 1099 and some of those men did take local wives. There was a bit more mixing than you might think after it happened. Obviously the rather small occupying Frank force had to cooperate with locals, and, as anywhere during almost any time of history, marriages would be made to seal deals. Also, as anywhere, during any time in history, people just fancied each other I guess.
