Why were the door lintels in really old dwellings so low?

Were people really that much shorter in olden times?

Some of this was that people really were, on average, significantly shorter in pre-modern times, mainly because of inferior childhood nutrition.

However, it was also practice to build the door lintels significantly lower than the ceiling height, so that warm air did not escape the room whenever the door was opened. This made it easier and cheaper to heat the rooms in winter.
