Why do the Jews find the Western wall of the Temple Mount holy, when the Southern and Eastern walls are part of the same structure (and a lot more accessible) ?

Partially because it's in the Jewish Quarter. But more importantly it's the wall that is closest to where the Arc of the Covenant would have been placed in the temple (where the Dome of the Rock now stands), and while the jewish consensus is that we should not go on to the temple mound until it's restored, being close is still considered holy.
