considering us humans were incredible at documenting events... are there other documents aside from the bible that talk about a person born of a virgin who could perform miracles and rose from the dead. I think that many people would have written about such a person at the time and I would love to be shown references.
I know similar questions have been asked on reddit but I thought historians would have the best references of all.
There are only two non-Christian sources within 100 years of the life of Jesus which mention Jesus at all. Josephus' Antiquities, and Tacitus' Annals. Neither are contemporary. Neither author lived at the time of Jesus.
Josephus is at least partially forged and neither Josephus or Tacitus says anything about Jesus performing, miracles, being born of a virgin or being resurrected from the dead. He is mentioned (at best) by both as the founder of the Christian sect who was crucified by Pilate, but that's really all they say. Even that much would have only been hearsay from the Christians around them.

On Josephus saying
Now there was about this time Jesus, a wise man, if it be lawful to call him a man; for he was a doer of wonderful works, a teacher of such men as receive the truth with pleasure. He drew over to him both many of the Jews and many of the Gentiles. He was [the] Christ. And when Pilate, at the suggestion of the principal men amongst us, had condemned him to the cross, those that loved him at the first did not forsake him; for he appeared to them alive again the third day; as the divine prophets had foretold these and ten thousand other wonderful things concerning him. And the tribe of Christians, so named from him, are not extinct at this day.

Some Christian texts that weren't included in the Bible mention miracles. For example, the Gospel of Peter mentions the resurrection.
