How did surnames involving "gold", "berg", and "stein" become associated with German Jews?

Names involving rubies, silver, gold and diamonds, pears, apples or poetic names like rose-flower or, say, color-of-the-sky Alexander Beider termed "ornamental" Jewish names. They first appear when names for Jews were made obligatory in the late 18th century in Eastern Europe.

It might be a reaction on disgusting names previously forced on the Jews in Austria and in some other German states.
