I would recommend China at War: An Encyclopedia. It's a reference book for every major war and battle in Chinese military history. However, it is a tertiary source, so the entries are not as comprehensive as the Cambridge History of China series. My advice would be to use China at War as a tool for introducing yourself to a subject, and then dig into the Cambridge History of China for more details.

That's quite a broad swath of history you're asking about- it's comparable to looking for a source about all the battles that took place in Europe from the Punic Wars until WWI. I would guess that such a comprehensive source would be difficult to find, and you would find better luck focusing on a single dynasty, perhaps.
