I have come across the Catholic Monarchs (King Ferdinand Queen Isabella Trastamara of Aragon & Castile) and their accomplishments and legacy intrigues me greatly. So if anyone would have some suggestions or recommendations, I would be greatly appreciative.

John Edwards's The Spain of the Catholic Monarchs 1474-1520 and Ferdinand and Isabella (Profiles in Power) are good places to start as they are intended as advanced introductions to Spanish history of this period. Peggy Liss's biography Isabel the Queen: Life and Times relies a little too uncritically upon royal chroniclers as a source, but nonetheless is a solid biography of Isabella.
