Why is it that such a large number of Muslims throughout Muslim-Majority countries believe apostasy should be punished by death?

Two reasons:

  • one, difference in opinion in regards to the denomination, or madhab. Some denominations are more strict in regards to apostasy than others.

  • two, in economically-disadvantaged countries and communities, religion is one of those things that binds the community together. So "betraying" said community hurts.

Now, you said you don't see the same pattern in "other religions", but I would beg to differ. Unfortunately, I can only offer from anecdotal observations, but I'm thinking a lot of Hindus would be pretty miffed if their sons, for example, marry outside their caste. Buddhist and other religious extremists also exists; however, since their numbers are correspondingly lower, and they are perhaps more better-represented in their mainstream societies, it's not as apparent.
