What was the standard Medieval European response to a heavy cavalry attack?

I was watching an Incan documentary where they mention that the Incas had no idea what a mounted soldier was, much less how to respond to an organized attack formation of cavalry units. I immediately think of pikemen as a standard defense. Any insight into how an experienced European defensive formation would look like?

You say medieval but you cite the Inca experience with Spanish cavalry, which is more of an early modern period. Which one are you more interested in?
