I think this is a cultural question not a historical one, the reason being it's simple marketing.

The same is true for Indians, Italians and most other types of restaurants that serve a particular style of dish.

Outside of the restaurant business you can see it in pubs (at least in Britain) with many pubs having very similar names (Red Lion and the Crown were the most popular) but lots have symbolism to do with either the monarchy or national roots.
