They are ceremonial jewels worn by a new King or Queen during their coronation. The purpose of them originally was to convey legitimacy during the coronation as in "of course I am the legitimate heir, I have the jewels of the previous monarch". There is very little chance of a dispute over legitimacy now but they are still used ceremonially. link
