If you're looking for fiction, the two I've read recently are (you'll have to forgive me, I'm terrible with remembering authors) "Legacy of Ashes" (CIA) and "Sword and Shield" (KGB). These are definitely not academic-quality texts, but they'll probably give you some idea of how the two "main" cold war espionage agencies worked.
Spycatcher was the first real cold war spy novel I read. It was so good the British Government banned it!
