Watching Peaky Blinders, they often talk about "chalkers and rafflers" at the racetracks. I'm not sure what exactly that refers to, and google doesn't seem to be much of a help in the matter. Can anyone enlighten me?
On Course Bookies' clerks performing particular tasks. The chalker writes up and changes the odds the bookie is offering, on a chalk board beside the particular bookmaker's station, and the raffler writes and hands out the betting tickets as the bookmaker receives cash. (By comparison with raffle tickets.)
