World War 2 saw the use of countless weapons and technologies many of them new, all major parties were researching new technologies and advancing the weapon system they deemed the most important for their war effort.

All major parties were leading in some area of research and were behind in some others. This devolped out of necessity. The United Kingdom was focusing on aerial and naval warfare while the Soviet Union didn't put the same priority on heavy bombers and lets say pathfinding technology.

Did the Germans have superior scientists/technology?

Yes they had technology which was superior but so did the British and the US. Research and development were ongoing and the war lasted relativly long so weapon systems which were once state of the art became obsolete over the course of the war. To give you an example Germany entered the war with the BF 109 a very capable aircraft which was dominating the skys before the war ( Legion Condor), the British responded with the Supermarine Spitfire which had the upper hand over the German aircrafts in some aspects. The Luftwaffe than, in 1942, introduced the Focke Wulf 190 ( FW 190 ) which was the best air supremacy fighter to this date. The British airforce responded with upgrading their models and "restored" parity with later modells of the Spitfire. When the P-51 entered combat over Europe the Luftwaffe was in a bit of slump technology wise but later bounced back with introducing Bf 109 K. Besides that the Luftwaffe now slowly introduced the Me 262 the most dominate fighter aircraft which saw combat during the war. If you would just ask who had the "best" aircraft of World War 2 you will see that for any given point there is maybe a different answer. This chronic is a simplified attempt to show how fluid the race for supremacy was. There were far more aircraft designs which had different roles and strenghts. Some aircraft were designed to excell at low altitudes others at high altitues some needed to able to land on an aircraft carrier. If the aircraft was to be used for night fighting than it had to be large enough to store a radar system and if possible a second crewman.

To expand on the airforces and show some issues with comparing technologies. The different airforces had developed their technologies out of necessity and not for records. The Luftwaffe had different requirements than the USAF. Take the P-51 and the Me 262, in contrast to the Spitfire vs BF 109 these aircraft were build and developed under totally different strategic goals. Requirements for the P51 were long range to escort bombers and good stats for dog fighting. The Me 262 didn't had long range since it should defend the skies over Germany or strike the near front if used as JaBo. The Me 262 was equipped with very heavy armament to crack open bombers, these weapons lacked range and were inferior when engaging other fighters. The mission of the Me 262 was to find a bomber stream approach it with high speed engage a bomber with its heavy guns and leave the battle with high speed. The job of the P-51 was to stay long in the air to protect bombers during their mission over Germany and watch out for German interceptors and then engage them if spoted. Totally different missions for both types of aircraft.

The Me 262 is also a good example for another problem with technologies. The Me 262 was a good aircraft but didn't see alot of combat. Having the best technology is often less relevant if it comes to late or if the industry is not able to ensure production and supply of these weapon systems.

Now we have established that all major parties had some technological edges, mostly Germany, Uk and USA. Back to your questions.

Germany had the technological edge in several areas. Since V2, Jets et cetera were likely covered in the show you watched i want to list some other important things.

Germany was able to maintain a state of the art arsenal of infantry weapons over the entire cause of the war. The infantry weapons of the Wehrmacht were superb and Germany didn't lose their edge ever as far as i know.

• The Wehrmacht made extensive use of mines and had advanced models which were inflicting significant damage on advancing allied infantry and armor. Again we see how the different parties had variying focus. The Wehrmacht was in constant retreat. The S mine would be an example also anti tank mines.

• Anti tank weapons portable and non portable. From 1942 the Wehrmacht always had the most powerful anti tank guns. The strongest guns which were fielded by the Wehrmacht could defeat any allied armor at any range at any time. The Panzerfaust and Panzerschreck were the best portable anti tank weapons of the war ( The Panzerschreck was invented by the US Army under the name bazooka, the Panzerschreck was an improved design). Getting hit by either of those weapons resulted most likely in a knocked out tank.

• Tank guns. Same as towed guns, from 1942 onwards German tanks guns were the most powerful guns culminating in the 12.8 cm cannon which would likely penetrate anything on combat range from any angle.

This list only includs German technology since the OP asked specifially about that, comparable list can be compiled for other major parties.

From what I read, yes the Germans were technologically superior in WWII. Unfortunately, they underestimated superior numbers of men and equipment can trump technology.
