Quite social actually! It is useful to refer to diaries to get a sense of how people actually interacted on a day-to-day basis (even though people will often present themselves differently from reality, even in a diary).

For example, just a snippet from Diary of a Little Girl in Old New York (the diary of Catherine Havens born 1839): 'January 2, 1850. Yesterday was New Year's Day, and I had lovely presents. We had 139 callers, and I have an ivory tablet and I write all their names down in it. We have to be dressed and ready by ten o'clock to receive. Some of the gentlemen come together and don't stay more than minute; but some go into the back room and take some oysters and coffee and cake, and stay and talk.' Obviously her family was very wealthy, but extremely socially active!

In diaries of the time you see lots of activities like playing music together, games like charades, gossiping and teasing. From the diary of Mollie Sanford, May 22nd 1857 (though she was living more on the frontier), 'We met at the well today (not as Jacob and Rachel though). He asked how I liked my serenade [referencing the songs he played at the party the previous night]. 'O!' I said, 'Dick, was that you? We thought a pack of hungry coyotes had ventured in from the prairie.' He looked hurt, and it was too mean in me I know, but dear me! I've got to do something with him. He bothers me to death.' She would have been 18 when she wrote that, and annoyed with a boy that had a crush on her.

If you want to get a good sense of how they acted at that time, check out some diaries! People were still humans, and though things like gaming or drinking had more negative associations than today, people at the time were very social with the same impulses we have. Diaries from the time are surprisingly fun to read and very readable, and I'd recommend both of those I referenced!
