Cookbooks are somewhat anachronistic when talking about past societies. Sophie Coe's America's First Cuisines which deals with the foodways and cuisines of the Aztecs, Maya, and Inca might be of interest to you. Sophie & Michael Coe's A True History of Chocolate, which covers cacao from domestication to the present, might also be of interest. Both are superb and engrossing texts on the subject. A few years back I wrote a bit on some of the foods that made up the Aztec diet, drawing upon Coe's First Cuisines.
