Is there any place where I can find all the surviving Latin and ancient Greek writings?

No, there isn't. The closest things are:

For Greek, The TLG (Thesaurus Linguae Graecae). This is a corpus of Greek texts covering almost everything from 8th BC to 1453. You need a licence to access it and the best way to do that is through a university.

For Latin, the PHI corpus covers Latin literary texts up to about 200 AD. For Later latin you need to go elsewhere, likewise for epigraphy.

For Patristic texts, still the most comprehensive collection is those by Migne, the Patrologia Latina has not been surpassed for scope; most of Patrologia Graeca can be found in the TLG. Of course, for individual texts, they are often surpassed by more recent critical editions.
