There are manuscript books from the 16th century that are fairly common--heavily decorated books were generally made as manuscripts rather than printed and then decorated as printing was maturing. Later manuscript books are generally specialized forms: there are pretty massive manuscript hymnals (like 3x1.5 feet) that were used so that entire choirs could see the page at once. Those were often easier to make by hand than to print because of the size of the press that would be needed, and the specialized nature of printing musical notes to begin with.
