Considering all the undeniable proof that the holocaust took place and the almost non existent room for doubt, how can people to this day deny the holocaust ever happened? what "Proof" do they use?

Holocaust deniers main tactic is to question the testimony/accounts of the individual and attempt to use their divergences to explain away the whole. This is an intellectually dishonest approach, and fails to consider the march of time and human experience. Human memory is malleable and how one person experienced what was a very much widespread series of events will differ considerably from how another experienced it. They will however, attempt to dismiss the events as exaggerated by pointing out inconsistencies between accounts. Discounting the fact that the Holocaust was a series of escalating events rather than some centralized machine. How a victim experienced it in France 1942 would differ greatly to how a victim would experience it in Poland in 1941.
There is also a lot of pseudo-scientific bluster in their arguments, often using the lack of staining on the walls of gas chambers as evidence that the event was a sham. They seriously underestimate how little Zyklon B is needed on warm blooded creatures (like Humans), which can absorb the gas through their open pores, nostrils, mouth, and so on. They also blatantly ignore the very much visible evidence of Zyklon B usage; the tell-tale "Prussian Blue" staining caused by it.
