In media I've often seen that two armies would have rules to adhere to while doing battle. Thing like "this general is a higher rank so he deploys his troops first"
These "Gentlemanly" rules that are ignored these days as they hinder ones effort for victory.
I'd like some sources on these as I find it bazzar and interesting!

I have no clue where you got the idea that Generals would 'take turns' 'deploying' for battle? Maybe a video game or something? I don't know but that was never done. Most things you hear about war being "gentlemanly" in the age of linear warfare (18th century primarily) are just outright misinterpretations masquerading as fact. They were fighting a war and they fought to win just like anyone else.
Don't really know what to recommend on this because, well, it didn't happen. Is there a particular war or period you're interested in the military history? Something a little more specific than 200 years of warfare!
