I believe this is impossible (although if someone knows an established and viable methodology I'll eat my words) to know.

Medieval peasants, or even really most lay persons, haven't left a sufficiently large documentary or literary footprint by which we could ever feasibly gauge how many words they knew (also, which region/language/etc.).
