As far as Norse mythology is concerned, we simply don't know. All of our literary sources are from well after the conversion, and usually (barring things like the Merseburg charms, which are fairly rare) written fairly long afterwards. We have very little in the way of guaranteeing that Snorri's Edda is an entirely accurate depiction of Norse mythology, though it's the best resource we have, outside of picture stones and the like.

For Germanic paganism, well, we know even less about that, since the conversion happened much earlier than in Scandinavia, and the mythology was lost much earlier. We can piece together bits of things - like Woden, Thunor, and Frige being chief deities - based on place-names, but otherwise, the evidence is scant and, to my knowledge, there isn't any extant corpus of the mythology (though I'd be happy to be proven wrong, of course!)
