I know they had their trouble with Arabs and the sackings of Constantinople by the crusaders. But wasn't there anything more to it than the Ottomans conquering them?

The Arabs did not sack Constantinople, though they did besiege it in 654, 668 and 717. I have provided a reasonably detailed narrative of the seventh century here, but I can't help you with the rest of the empire's history. This is a huge time-period and I doubt anyone here can summarise nearly one thousand years of history for you, perhaps it might be worth you checking out the wikipedia page and then you can come back with more specific questions? Good introductory books to this topic are The Byzantines by Averil Cameron and Byzantium: The Surprising Life of a Medieval Empire by Judith Herrin; they are both very readable and will I think provide you with a more up-to-date narrative than wikipedia.
