Any culture's mythology would be fine but I am most intersted in Greek, Roman, Indian (India), Chinese, and Japanese.

It is not only a survey of non-western mythology, but also a psychoanalysis of why mythologies are so similar. It's dated and not entirely in favor now days, but if you're looking for some general account of human mythology I still think it's the go-to book.
I'd recommend Norse. They do it best.
